Creamy Pea & Broccoli Soup

OH MY GOD this soup is good !! So deliciously creamy with loads of green phytonutrients to boost the system, its like a big nutritional hug for the body.

Peas are a great source of iron, an important mineral required for boosting and protecting the immune system. The Broccoli greens in general have so many protective health benefits its just ridiculous ~ think hormonal regulating, cancer & heart protective, antioxidant, blood sugar control, gastrointestinal & microbiome recovery (to name a few). I could go on and on about this soup but I will just say that it is a powerhouse super soup which is fibre rich, nutrient dense and is pure goodness in a bowl. Bonus - super easy !

Creamy Pea & Broccoli Soup

Ingredients
  

  • 1 Onion
  • 4/5 Cloves Garlic
  • 2/3 small potatoes peeled whatever you have lying around I used some small nicolas I had in the fridge
  • 1 large head of broccoli
  • 2 cups frozen peas
  • 1 Litre Vegetable stock
  • Pinch Salt & Pepper

Instructions
 

  • Heat Olive Oil in a large saucepan over a medium heat, add onion and garlic and sauté for 3 minutes. I sometimes feel the need to splash in some balsamic vinegar (not sure why) but I think it adds a little something. (completely optional).
  • Add potatoes, broccoli, peas & vegetable stock with a pinch of salt & pepper. Cook on medium heat for 30-40 minutes or until the vegetables are cooked. Try not to over cook.
  • Blend the soup with a hand blender until smooth. (I blended this one in my high speed blender as I don't have a very good hand blender).
  • Serve and top with your choice of goodies.
  • For a creamier soup the recipe called for some blended through yoghurt but I think with the potatoes its creamy enough.
  • The best soup of the year so far ! Enjoy

Notes

top it off with herbs of choice: - chilli flakes, thyme, toasted seeds a dollop of yoghurt) I couldn't wait so I just shredded some mustard greens in the garden and sprinkled some chilli. The choice is endless. You could even put on some sauerkraut on top just for the added microbiome & gut health.
