Red Lentil Soup

Full of the nourishing goodness of garlic, chilli & thyme this is a beautiful winter warming soup for the soul. Red Lentils are full of plant proteins, Iron and prebiotics for gut health, this red lentil soup is a goodie. Prebiotics help the good bacteria in the gut to flourish which helps overall digestion and a healthy microbiome environment. This dish was so easy to make and I finally found a way to use my red lentils, which have been patiently waiting for me in the cupboard.⁠

Red Lentil Soup

Ingredients
  

  • Garlic however much you want more the merrier I believe but I put in 3 big cloves and then some.⁠
  • 1 brown onion⁠
  • 2 tomatoes roughly chopped⁠
  • 1 big cup of dried red lentils washed thoroughly⁠
  • 2 carrots roughly chopped⁠
  • 1 Litre vegetable stock⁠
  • Chilli thyme and salt & pepper to taste.⁠

Instructions
 

  • In a large saucepan on medium heat, sauté garlic, onions and tomatoes in a little olive oil.
  • ⁠Add washed lentils, carrots, stock, chilli & thyme.⁠
  • Bring to boil, reduce heat and simmer for 30 minutes or so. Once cooked, season and blend with a stick blender until smooth. Easy peazy !!!⁠
  • To serve, add what you like maybe some small blanched broccoli florets or some crunchy sourdough, nuts.
